Most hardware stores such as Wilkinsons or Boots will sell wine equipment. Failing that good old ebay and Amazon sell this kind of equipment.
Simmer them in some of the water with the bruised ginger and lemon peel for 45 min.
Strain and make the liquid up to 4.5 liters. Pour this hot liquor into a bucket over the sugar, add the juice of the lemons and the yeast nutrient and stir until the sugar dissolves. When the liquor has cooled to 21*C add the general purpose wine yeast. Keep the bucket closely covered in a warm place for four days.
Stir thoroughly and transfer the liquor to a fermentation vessel and fit an airlock.
When the wine begins to clear, rack off (siphoning off the yeast and deposit at the bottom of the demi-john) into a fresh demi-john and leave for another three months before the final bottling.
